Jun tea tastes great, but really comes into a world of its own with a second ferment. You can use all kinds of fruit for this process, but our personal favourite has to be using fresh strawberries to make Strawberry Jun Tea. It makes a really sweet, fruity and delicious drink that can be enjoyed by the whole family. It’s also a great way to get kids and people who are not fans of Kombucha or Kefir into drinking probiotics.
Making Strawberry Jun Tea is very simple, you need the following ingredients:
- Raw Honey
- Un-chlorinated Water
- Green Tea
- Fresh Strawberries
- A Jun Tea Scoby.
Make your Jun tea as normal following the instructions on our page here. Allow the Jun Tea to ferment for 3 days. Remove the Jun Tea Scoby and a small amount of starter tea and keep the rest to be bottled for the second ferment.
For the best tasting Strawberry Jun Tea, over ripened, soft strawberries work best. If your strawberries are quite firm, its often best to leave them on the side to ripen for a few days first. This really brings out the strawberry flavour in the brew.
We prefer to second ferment directly in the bottles. To achieve this, your need to slice your strawberries into thin strips. They need to be able to drop in and out of the bottle necks with ease. We find this method works best to give you a really nice fizz. Add enough strawberries to the bottle so that 1-2 cm of the bottom of the bottle is layered in sliced strawberries. The more you add the sweeter it will be. There is no hard fast rule on how many you should use.
Leave the bottles on the side for around 12 hours at room temperature. Much more than this will over carbonate your Strawberry Jun Tea and lead to explosions. After 12 hours, ALWAYS refrigerate your bottles. This will slow down the fermentation and the carbonation process.
You can drink your Strawberry Jun Tea once chilled. It will keep for around 7-14 days in the fridge. To drink, strain the liquid into a glass removing the slices of strawberry. ALWAYS be careful when opening the bottles. They can get very explosive. Open them over a sink carefully releasing any gas inside.
What is Jun tea?
Jun Tea is an effervescent fermented health drink, made from green tea and honey. It comes from the Jun Tea Scoby, a cousin to the Kombucha Scoby. Jun Tea is arguably a more subtle flavored Kombucha. Usually, people who brew both Jun Tea and Kombucha say they prefer the flavour of Jun Tea to Kombucha. It’s referred to as the “champagne of kombuchas.” Now that’s saying something!
Jun Tea is thought to have derived from the East, where it is said to have been brewed in monasteries and consumed by monks and warriors for its health benefits in order to promote a state of well being and as aid for a clear mind. That’s the myth, but the truth is we don’t really know for sure.
However, Jun Tea is still brewed in Western Tibet and is well known there. As such, Jun probably did in fact originate from Tibet, passed down from generations by monks and locals — so there is some truth to the myths.
It could be in fact that Jun Tea is the ‘original’ Kombucha, given that sugar was hard to come by long ago on the Tibetan plain. Perhaps the Jun Scoby was taken out of Tibet and was brewed with sugar, adapting to the regular sugar brew and becoming the Kombucha Scoby.
Does the Jun Tea Scoby look different to a Kombucha Scoby?
The Jun Tea Scoby is much paler, looking almost white in colour. You can think if it as the albino of the family. Generally it tends to ferment a little faster than Kombucha. This is considered to be due to the honey being broken down much faster than sugar by the bacteria present in the Jun Tea Scoby. Jun Tea itself is much lighter in colour than Kombucha, which is often quite dark.
The alcohol content in Jun Tea is much higher than Kombucha!
Jun tea can contain up to 3% alcohol. We recommend it be drunk only by adults and if your sensitive to alcohol or need to abstain from it altogether, then we don’t recommend drinking it at all.

Always be sure that you are buying authentic Jun Tea Scoby. Many sellers on other sites offer cheap Jun Tea Scoby which are actually just regular Kombucha ones. Kombucha will ferment green tea and honey for a short amount of time, producing a fake jun tea. This is bad for the long term of health of a Kombucha Scoby and will quickly leads to problem with mould and eventually the Kombucha Scoby will die.
